My favorite fall recipes

As the days get shorter and the nights get colder, certain foods give comfort. There are many foods that I like to have during the fall, but my two favorites are chicken stew and apple pie. 

Any type of stew or soup is good to have during the fall but I like chicken stew the best. Potatoes, carrots, chicken, corn and peas; what else could you ask for in the perfect dish? Recently, my mom and I made this dish together so she could teach me to cook. An easy recipe like this doesn’t take hours like your regular beef stew would. 

Apple pie is something my grandma would normally make when my parents and I go over to her house for dinner. This time, my mom and I decided to make it and see how it would turn out. At first we thought it wasn’t going to turn out correctly because it was bubbling all over the dish. In the end though, it turned out so good and I would definitely make that myself again. Adding a little bit of whipped cream is the perfect element to top this pie off with.

Chicken Stew recipe:

Ingredients

  • 1 ½ pounds boneless skinless chicken breasts
  • 1 pound of carrots
  • 4-5 medium sized potatoes
  • 2 cups of frozen corn and peas mixed
  • ¾ cup of flour
  • 4 tablespoons of olive oil
  • ½ teaspoon black pepper
  • 1 teaspoon of salt
  • ½ teaspoon of garlic
  • 4 cups of chicken stock

 

Cooking Steps

  1. Wash and peel potatoes and carrots
  2. Cut chicken, potatoes, and carrots into cube like shapes
  3. Put your flour, garlic, salt and pepper into a gallon sized plastic bag. Then add the chicken in that bag, close it, then shake up until all of the chicken is covered
  4. Heat the oil on medium heat in a large pot, then dump all of the contents of the chicken bag into that pot to brown.
  5. When the chicken is browned add the carrots and potatoes and cook for about 5 minutes.
  6. Add the chicken stock, bring it to a boil, stirring often.
  7. Then turn down to simmer until vegetables and chicken are cooked thoroughly.
  8. Once that is cooked through add the peas and corn and cook for 5 more minutes
  9. Let sit for a few minutes then it is ready to serve and enjoy!
